How to Grow Lion's Mane Mushrooms at Home

Lion's mane is a gourmet favourite with a crab-like flavour and a striking white, shaggy, pom-pom shape. It is slightly fussier than oyster about fresh air and humidity, but very achievable for a beginner who follows the steps.

Step-by-step

  1. Choose a hardwood substrateLion's mane prefers supplemented hardwood sawdust (commonly oak or beech) with a bran supplement. Most beginners start from a ready-made sterilized sawdust fruiting block to skip the pressure-sterilizing step.
  2. Inoculate cleanlyIf using a block, inoculate with sawdust or grain spawn in front of a still-air box or a freshly wiped-down area. Lion's mane is more contamination-sensitive than oyster, so sterile technique matters more here.
  3. Colonize (2–4 weeks)Incubate at 20–24°C (68–75°F) in the dark. The block turns fully white, sometimes with a faint fuzzy texture, when it is ready to fruit.
  4. Fruit with high humidity + fresh airCut a small X in the block, move it to 18–21°C, keep humidity high (85–90%), give bright indirect light and lots of fresh air exchange. Low humidity is the top reason beginner lion's mane dries out and stalls.
  5. Harvest before the spines brownHarvest when the cluster is plump and white and the spines (teeth) are 1–2 cm long, before they yellow or brown. Twist the whole pom-pom off the block.
